In central Tuscany, below the Garfagnana hills is the small town of Matraia. Every year they celebrate a blood sausage festival, which attracts over 2000 people. It is a fattier version of black pudding or boudin blanc, like an offal salami. All the local butchers compete to see if their sausage wins the top prize and a seat in the winners gold throne.
