The aubergine season has started in southern Europe. The southern Italians love it, especially the Sicilians who have a summer pasta dish called spaghetti all Norma.
The Italians are also eating asparagus, often served with ham hock, cream & gnocchi
Further north, the Tuscans are eating wild garlic which they make into a pesto and mix with rigatoni, a wonderfully simple dish.
